Nero d'Avola
Prince of the native Sicilian red vines, NERO D'AVOLA, also known as CALABRESE or CALABRESE D'AVOLA, takes its name from the ancient lineage of the "Calabresi", originally from Modica which extended its lands from the county town to Avola which he had taken care of its cultivation almost exclusively.
CASA VINICOLA PALLAVICINO has been producing this surprising vine in purity for over thirty years, enhancing its characteristics and differentiating it into three distinct personalities: the Amabile, the Secco, and the Barricato.
The Lovely
L'AMABILE, “il Ruffiano”, characterized by a perceptible residual sugar, an intense red color with violet reflections.
A young, full-bodied, alcoholic and at the same time soft wine.
It goes well with legume dishes, fresh cheeses, ricotta, jams and, if you can, marry it with a prickly pear and honey. Serving temperature 12°-14°.
The Dry
THE DRY, “the Egocentric”. He knows he is worth it, he doesn't like any external influence.
After the alcoholic fermentation, and followed by the malolactic fermentation, it only wants to rest for 6/8 months in stainless steel tanks.
You will appreciate the true essence of NERO D'AVOLA. Ruby red in color, bright and lively, it stands out for its notes of red berry fruit.
Excel with cured meats, red meats, medium-aged cheeses.
Serving temperature around 18°.
The Barricade
THE BARRICATO, “the Elegant”. Once the alcoholic fermentation, the malolactic fermentation and the rest in stainless steel tanks for 6/8 months have been completed, this NERO D'AVOLA is further refined in 25 hl oak barrels for approximately 10 months. In this period of time, the micro-oxygenation and the release of tannic substances from the wood give it a new personality. The colors range from purplish ruby to garnet.
On the nose the aromas become spicy and acquire notes of leather, tobacco and chocolate. Alcohol content 14°. Serving temperature 20°.
It goes well with meats in sauce, ricotta ravioli, grilled meat, roasts and cured meats.
INTERNAZIONALE CON UN TOCCO DI SICILIA
The Syrah
Vitigno internazionale,CASA VINICOLA PALLAVICINO lo propone in purezza o con esigua percentuale di nero d’avola.Colore porpora intenso, leggermente speziato con aromi fruttati di prugna, mirtilli e cacao. Caldo, rotondo e corposo,si abbina a carni rosse, cacciagioni e agnello.Da provare con pecorino stagionato al pepe nero.Gradi 14°. Temperatura di servizio 20°.


DUCTILE AND LONG-LASTING
Cabernet Sauvignon
Vinificato in purezza o con esigua percentuale di syrah e nero d’avola (a discrezione dell’enologo).
Questo vitigno internazionale CABERNET SAUVIGNON realizza un vino strutturato e persistente e tannico.Note di ciliegia e ribes nero. Si accompagna con carni rosse lla brace, salumi e formaggi stagionati.
SICILIAN WHITE
Inzolia
Native Sicilian vine with a straw yellow colour. Fragrantly fruity, aromas of white and yellow peach, pear and apricot are immediately perceived. It goes well with fish dishes, fresh cheeses, ricotta and jams. Excellent as an aperitif.

THE FATHER OF MARSALA
Grillo
Used in the Marsala area for the production of MARSALA, this native vine has been present for years in the list of important Sicilian white wines. Intense straw yellow, with floral aromas and citrus notes.
Savory, alcoholic and with moderate acidity, together with a good structure, which make it suitable for moderate aging.
It goes well with fish-based dishes and vegetarian cuisine in general.

INTERNATIONAL WHITE
Sauvignon Blanc
International white grape variety among the most popular wines in the world. Straw color, delicate and floral scent. The tropical aromatic notes of maracuja or passion fruit stand out.
It goes well with shellfish, fish, fresh cheeses.
